The trick to the best ice cream – how to make a great custard

Like so many things in life making homemade ice cream is an exercise in prioritizing. You can make a simple batch with cheap ingrediants, and it will probably turn out ok, but maybe not as good as what you could buy from the store down the road.
On the other hand you could use the best quality ingredients take no short cuts at all and make something truly spectacular. The truth is most of us will fall somewhere between these two extremes. A step I believe is vital to producing a really creamy and memorable desserts is using a custard rather than just your normal milk and cream mixture.
The addition of eggs to the mix may seem a bit unusual but wait to you taste the result. This is how the best French chefs produce ice cream in their own kitchens. It will be richer and smoother than your normal batch.
You’ll need a large suacepan on a low heat. Mix milk sugar and the eggs together, and stir them constantly. There are lots of resources available on the internet showing exactly what proportions to use to get a replacement amount for your recipe.
The custard will thicken, when you can draw your finger along the wooden spoon and it leaves a trail then you are done. At this point consider passing it through a seive, this will remove any egg that didn’t go into the mixture and can remove any curdled milk.
Allow this to cool and use it just as you would milk or cream in your frozen treat directions. To make the best, you’ll need a great appliance like a White Mountain Ice Cream Maker. After 40 minutes following the directions you’ll have the most wonderful dessert ready for your friends and family.

Article Source: http://www.articlesbase.com/ – Choosing the Best Ice Cream Maker
You can make delicious ice cream at home, as good as any premium store brand, if you choose a good ice cream maker and follow a few tips. Ice cream makers can range in price from under 0 to over 0. The more expensive models contain built in freezing compressors. The less expensive models are perfectly suited for use in the home and come in two basic types. There is the type that uses rock salt and ice to cool the ice cream mixture and the type that has a canister that is placed in the freezer. Each of these is equipped with an electric crank or a manual crank. Your particular needs will determine which is right for you.
If you want to make a large quantity of ice cream, you will need to purchase a model that uses rock salt and ice. The canister models will only make up to 1.5 quarts at a time. If you would like to turn ice cream making into a family activity, you can choose the hand-crank model, which will also use rock salt and ice. The crank must be turned manually for a fairly long period of time, thus allowing each family member a turn. An electric crank is quite a bit easier than the manual crank models. You will also get more consistent results due to the bowl turning at a constant speed. Most electric crank ice cream makers will have an automatic cut off feature that will stop the motor when the ice cream reaches the desired consistency. The consistency is judged by the amount of resistance while the bowl is turning.
After you choose which type of ice cream maker is right for you, you will need to find the perfect ice cream recipe. Remember that the faster the ice cream freezes, the better it will taste and the smoother the texture will be. It will be best to pre-mix all your ingredients and let them chill for several hours before placing them in the ice cream maker. When your ice cream is done, it will resemble soft-serve ice cream. You can place the canister in the freezer for a few hours and you will be much happier with the results. If your canister is plastic, consider removing the ice cream as soon as it is done, and placing it in a metal bowl covered with foil. The metal will allow the ice cream to freeze faster and become firmer more quickly than in a plastic container.
You can purchase a mix that is quite easy to make into ice cream very quickly. While the mixes are convenient, the best homemade ice cream is made from fresh ingredients. Milk, sugar, eggs, vanilla, and cocoa if you desire will give you the best results. You can find numerous ice cream recipes, some which require cooking some which require no cooking. The ice cream recipes that do not require cooking are generally just as good as the cooked type, and require a lot less time. The best ice cream recipes usually contain eggs, however there are many recipes that do not use eggs if you or someone in your family is allergic to eggs.

The Best Ice Cream Maker For You – Which Is It?
The best ice cream maker for you – it’s out there, but which is it? Everyone agrees homemade ice cream is amazing and that the easiest way to make ice cream at home is with an ice cream maker. But not everyone will agree on which machine is best. Finding the best ice cream maker for you depends very much on your family and your style of doing things.
If you’ve never owned one before, you might think it’s just a matter of looking up the best ice cream maker ratings and buying one of the top ones. Sounds good, but that’s actually step two of the process. Many people don’t realize that there are different kinds of machines until they start looking for one and find themselves faced with a myriad of very different choices.
Do you want a manual ice cream maker or an electric ice cream maker? A top of the line compressor ice cream maker or an old fashioned bucket freezer?
More importantly, does it make any difference?
Yes, it does. The kind of machine you choose will affect how you make your ice cream, how much time it takes and how smooth and light it turns out. It will make a difference in the noise level in your kitchen and especially in how much advance planning you’ll need before you can get started.
Electric gel-canister models require you to plan a day ahead. The biggest ones only make 2 quarts of ice cream. But they’re affordable and easy to clean. If you want to churn out 6 quarts of ice cream at a time, on the other hand, you’ll need a freezer bucket and will have make sure you have lots (and I mean lots!) of ice and salt on hand.
With a compressor ice cream maker, there’s no advance preparation required and the results will be so far beyond anything you’ve ever made, you won’t believe it. But you’ll have to provide enough storage room and be able to cover the high cost of one.
If this sounds confusing, it needn’t be. It’s a matter of figuring out your priorities:
Are you looking for spur of the moment gourmet results (compressor model) or for an afternoon of family fun with the kids, churning away like Laura Ingalls Wilder? (old-fashioned hand crank model)
Are you on a budget (electric gel-canister model), or is money no object (compressor model – lucky you!)?
